Delicious 3-Minutes-3-Ingredients Vegan Broth

This easy trick came to me by accident. I was experimenting with stuffed onions, and in the process of upgrading onion skins from simple boiled uninteresting ones, found that what they left behind is a most lovely, all-purpose savory broth.

3 ingredients, 3 minutes of active time, and this broth will do wonders to any soup, stew or sauce you incorporate it into.

The onions are useful too. Two options here: I'll show you how to make stuffed onions in a separate recipe, or you can puree them in a blender or food processor, and add the tasty mush to soup, stews or dressings.

Ingredients:

  • 3-4 large onions, peeled, make a top to bottom cut to the center, as if you’re going to remove a wedge (see photo)
  • 3 tablespoons Dr. Ayala’s Magic Spice
  • ½ teaspoon salt

Preparation:

  1. Fill a large pot with water, add all the ingredients, bring to a boil over high heat, and then reduce to a simmer.
  2. Cook for 30-40 minutes, until the onions are soft and their layers start to fall off.
  3. Strain, and keep the broth in a container – will keep in the fridge for 5 days.
  4. *Leftover onion: Puree and add to your soup, or keep for stuffed onion dish.
